Chunky butternut squash soup
3 cups diced butternut squash, 1 garlic clove, 1/2 tsp paprika, 1/2 tsp chili powder, 1 tsp onion powder, 1 (400ml) can of coconut milk, 1 1/2 – 2 cups of vegetable broth (depending on how thick you like your soup), olive oil, 1 cup cauliflower fleurets, 1 cup sliced cremini mushrooms, 1/2 cup canned chickpea, salt

Butternut squash is one of my favorite ingredient, I love its sweetness and creaminess, so this time I made butternut squash soup.
It’s the perfect cosy, warm you up from the inside, bundle up in a blanket kind of soup. It’s hearthy, creamy, a bit sweet, lots of chunky, healthy comfort food.
