Healthy Spaghetti With Zucchini - Low Carbs

    Hello everybody!

    It’s been a long time since we cooked together! Let’s catch up and make some healthy spaghetti.   

    When I checked some other similar recipes, I saw that people call this recipe a “Zucchini Noodles”, “Zucchini Pasta” or “Zoodles”. I like to use the word spaghetti for it. Sometimes, I shortly say “Zpaghetti”. :P

    I was so happy to discover yet another way of making a zucchini meal. Normally, I love eating vegetables, but after some time eating the same vegetables in the same way (like eating potatoes always as fries) makes you bored. So, this vegetable monster was happy to find out another way of enjoying her meal. (Btw I’m not vegetarian, I just like to eat veggies)

    What Do We Need:

    For the Spaghetti:

    • 4-5 Zucchinis
    • Olive Oil
    • Salt

    For the Sauce:

    • 2 Cloves of Garlic
    • 1 Tablespoon of Tomato Paste
    • 1 Grated Tomato
    • Pepper
    • Flaked Red Pepper
    • Hot Water


    1. Cut the zucchinis with a spiralizer. I don’t have one, so I cut them with a peeler. It wasn’t that easy to give the shape of spaghetti with the peeler, so I suggest you using a spiralizer.
    2. Put 4 tablespoons of olive oil in a pan. Add the zucchinis and salt.
    3. Stir everything and let them cook. (Zucchinis must be cooked and soft enough to eat.)
    4. Put 2 tablespoons of olive oil in another pan for the sauce. Grate and add the garlic into the pan. Let them cook for 3-4 more minutes.
    5. Add the tomato sauce, grated tomato, salt, red pepper, paprika and 3 tablespoons of hot water into the sauce. Stir everything and cook for 5 minutes.
    6. Add the cooked zucchinis to the sauce and cook for a bit more. 
    7. It’s ready and enjoy!

      Whoa. It looks so pretty to look at plus it's healthy! Going to save this recipe once I can get my hands on a spiraliser! And  haha, I love how you shortened it to say “Zpaghetti” :D It feels like saying it an Italian accent in a very fancy way :)
