Vegan Dal makhani (vegan butter lentils)

    1 cup red lentils, ½ cup brown lentils, 1 cup water, 1 onion, 1 tbsp fresh ginger, 6 garlic cloves, 1 can (400ml) coconut milk, 2 tomatoes, ¼ cup vegetable gee (or margarine), 1 tbsp chili powder, 1 tsp ground coriander, 1 tsp ground turmeric, a big handful of fresh coriander, juice of 1 lime, salt

    This dal makhani is my new favorite comfort food, it is rich, buttery, garlicy, healthy and absolutely divine. Oh! and did I say, gluten free!

    Dal makhani was first created by Punjabis and is now recognized as a quintessential Indian dish, and variations of the dish are served in many different restaurants internationally.
