Homemade Cheesecake - Tasty and Healthy

    Hello ladies, 

    I hope everybody is doing well. Let’s begin the week with a new recipe. This time, we are going to make a delicious cheesecake!   

    If you have read my previous posts, you have probably seen that I don’t like to use white refined sugar and all-purpose flour in the kitchen. If I have the chance, I prefer to replace them with something healthier. Before the recipe, I want to give you some alternatives for refined sugar and all-purpose flour. 

    Alternatives for Refined Sugar:

    -Honey

    -Stevia

    -Agave Syrup

    -Coconut Sugar

    -Dates

    -Dried Apricots

    -Banana Puree

    Alternatives for All-Purpose Flour:

    -Oatmeal, oat bran

    -Whole Wheat Flour

    -Gluten-Free Flour

    -Brown Rice Flour

    -Rye Flour

    -Coconut Flour

    -Quinoa Flour

    -Chickpea Flour

    -Beans

     

    Some find my search for healthy alternatives boring, but I like it.   I believe it’s possible to eat both delicious and healthy things at the same time.

    Ingredients:

    • 20 dates
    • 1 cup of nut flour (Blend almonds in a blender for 10-15 seconds until they are broken up.)
    • 1 cup of oat flour (Blend oatmeal in a blender until it’s broken up.)
    • 1 tablespoon of coconut oil
    • 2 eggs
    • 2 cups of Greek yoghurt
    • 200 grams of mild cream cheese


    Sauce:

    • 2 tablespoons of honey
    • 10-15 strawberries

    Recipe:

    -Preheat the oven for 170 degrees Celsius. (338 Fahrenheit)

    -Put the dates in a bowl and cover them up with hot water. Leave the dates resting in overnight.

    -Get the seeds out and peel the dates’ skin. (Leave the water in the bowl)

    -Blend the dates and the water in a blender until it becomes a puree.

    -For the crust, stir the oat and nut flour, 1 tablespoon of melted coconut oil and 1 tablespoon of dates puree in another bowl.

    -Put this mixture in a cheesecake pan and press into the bottom until it becomes flat. Leave the crust in the fridge for 1-2 hours.

    -Mix the yoghurt, cream cheese, eggs and the rest of the dates puree with a mixer.

    -Pour the yoghurt mixture on the prepared crust.

    -Bake at 170 degrees Celsius for 30-40 minutes. (The center should have a small jiggle.)

    -Refrigerate for 4-5 hours or overnight before serving. 

    -Blend the strawberries and the honey in a blender until it becomes fluid. Add the sauce on your cheesecake and enjoy!
